Healthy recipe – Spiced roast chicken

The Winter months often call for slow cooked dishes and succulent roasts surrounded with healthy vegetables and full of flavour. So we thought we would provide you with a delicious roast chicken recipe from one of our favourite sites changinghabits.com.au – It’s gluten free and maximises the juices to make your own gravy. Perfect for Sunday nights surrounded by family and friends (and maybe even a glass of wine).

 

Spiced roast chicken

INGREDIENTS

  • 1.5 – 2kg whole chicken (free range and organic if you can)
  • 3-4 garlic cloves
  • Coconut oil
  • Turmeric powder
  • Cumin powder
  • Paprika powder
  • 1 x lemon
  • Sage leaves (handful)
  • Onions to roast
  • Vegetables (your choice)

 

METHOD

  1. Preheat oven to 240 C
  2. Place chicken in roasting tray
  3. Pierce chicken in various places, and place garlic into holes
  4. Smear entire chicken generously with coconut oil
  5. Sprinkle turmeric, cumin, paprika, salt and pepper generously onto chicken
  6. Prick the lemon and place inside the chickens cavity with sage leaves
  7. Place chopped roasted onion and vegetables around the chicken in a roasting tray
  8. Turn the oven down 200 C and put the chicken in
  9. Cook for 1hour and 20 minutes – the chicken should be golden brown on the outside
  10. Remove chicken and rest for 15-20 minutes

To make the gravy, use the juices from the chicken to make your own gravy. Just add salt and pepper, some of the roasted onion, lemon juice and your choice of thickener.

**Thickeners can be powdered gelatin or arrowroot tapioca flour and use 1-2 tbsp per cup of liquid
