Plant based zucchini Moussaka

There is a lot of conversation surrounding plant based eating and if you feel that this is something for you or maybe you would like to try a little less meat in your diet, we thought that we would share with you a delicious plant based recipe that is perfect for Summer

This zucchini moussaka by Food by Maria tastes as good as it looks. All the ingredients are listed below and you can find the instructions for how to make it at home HERE

Ingredients
  • 2 tbsp Basil, dry
  • 2 Bay leafs
  • 1 400ml can Black beans
  • 2 400ml can Brown lentils
  • 1 Eggplant, cut into 1/2- 1/4 inch slices, large
  • 3 cloves Garlic
  • 3 tbsp Marjoram, dry
  • 600 ml Roma tomatoes
  • 3 Russet potatoes, peeled and cut into 1/2-1/4 inch slices, large white
  • 1 White onion, large
  • 2 Zucchini, cut into 1/2-1/4 inch slices, large
Condiments
  • 1 tsp Vegetable stock paste
Baking & spices
  • 1/2 tsp Cinnamon
  • 1/4 tsp Cloves
  • 1 tbsp Coconut sugar or white sugar is fine too
    Oils & vinegars
    • 7 tbsp Olive oil
    Other
    • Season to taste
