RECIPE | Healthy Blueberry Pikelets (perfect for the kids lunchbox)

Looking for something inspiration for the kids lunchboxes. We love this recipe from website Veggie Mama for Blueberry pikelets using coconut sugar and buckwheat flour. A great snack for the lunch box and being that it is quick and easy, a perfect snack for after school.

Ingredients

  • 1 cup buckwheat flour
  • 1 tablespoon baking powder
  • 1/2 cup blueberries
  • 1/4 cup coconut sugar
  • 1 pinch salt
  • 1 Large egg
  • 3/4 cups milk (almond milk is great)

Directions

Step One

Mix all the dry ingredients together.

 

Step Two

Add milk and egg

 

Step Three

Pour mixture in a frying plan over medium to the size that you want the pikelet to be (approximately 1/4 cup).

Once golden brown on the underside, flip onto the other side and leave until cooked through.
